Blue Gills, although bony, are excellent table fare. If caught in clean water they are (in my opinion) the "sweetest" tasting fish in Freshwater. They are also extremely easy to catch AND (typically) carry the least amount of mercury and PCB's.
Although there isn't a lot of meat on one 'Gil, due to there (over)abundance in most Waters, you can EASILY feed a crowd with 20-30.

I do, They're my favorite freshwater fish. Good all year round but especially tasty fresh caught through the ice.

Not a lot of meat on them. I have eaten them before, but prefer sea bass or salmon these days.
