Well according to Ted Allen's Blog he was at the Food and Wine Classic in Aspen over the weekend .Playing high-stakes poker with other chef's for Charity. Sam was one of the final three left standing in the end!
His deal with Spitzer's fell through at the last minute but the Post reports that Sam has something much bigger in the works luring him away. ( link below )

Sam Talbot returned to the "Top Chef" kitchen for a special episode of "Top Chef: Miami" in which 4 contestants from Season One competed against 4 from Season Two in the ultimate Top Chef cook-off for charity.
Season One brought back Harold, Tiffany, Stephen, and Dave because while they should have had the top four, Leanne now works for the show and was thus inelligible to "compete." Season Two had Ilan, Marcel, Sam, and Elia.

Other than that, I'm not sure. I think he's still an Executive Chef, though I'm not sure where because he may have moved back to NYC after the show was over, but I don't know if his old job took him back after such a long leave of absence. I was so sad he didn't make it into the final. I saw him in Sherman Oaks in December 2006, right before the episode where he got eliminated aired. I wanted him to win!

More recently he appeared on the 4StarAllStar cookoff featuring the top 4 from season one against the top 4 from season two. Season one won. Sam also appeared at a Top Chef Day celebration at Union Sq, NYC, last week. Sam cooked against Ilan and lost. I don't know if Sam is still looking for work.

I enjoyed watching that practice as quickly as I had stable get entry to to a television. That one lady grew to become into great as wine, or perhaps the poorly arranged food regarded dank as hell. yet Metallica suck azz and don't belong on the practice for 2 motives: (a million) they seem to be a metallic band and (2) the practice does not suck azz.
