Sorry if this seems a little funny but I'm attempting to cook them. I've never ever seen them until now lol. So, by cleaning them, they do mean running them under water right?? Or am I missing something here >.<
Also, I'm soaking them in milk (1%) instead of buttermilk to tenderize because that's all I had. That 'ought to do the trick ehhh?

from the wedge side, slice in half. rinse under cold running water. dry off with paper toweling. Dip in egg or buttermilk then roll in seasoned flour and fry. Buttermilk will not tenderize them, neither will milk. Egg or buttermilk are thicker substances so will make the flour dredge stick better.

They used to sell them at KFC. Not anymore.
Heck they don't even have bones in the pieces of chicken, much less an innard.
And they're pretty good if you cook them right.
Remove the stringy bits, fat and membranes. The livers don't need tenderizing. hearts and kidneys are kind of not worth the trouble taste wise, but your dog will like them.
