We are going to be driving from Nice to Paris France from Feb 25-March 6. We haven't decide what our exact route will be yet. I want to see chateaus, vineyards, small quaint historical villages, underground churches and mingle with the locals. Any suggestions?

Toulouse is a beautiful city, home to the Saint Sernin Basilica. Beautiful building. The food is great too, beautiful foods from all areas in the south of France. However, it is a city, therefore it may be hard to mingle with the locals. Though I found most very friendly. But you can go through there and make your way to the Bordeaux region, known for good food and even better wines, from there you can make your way up the west coast and then head inland to Paris.
Aix-en-Provence is a great city. It's beautiful and has a huge market downtown. I would suggest spending a few days there, and one day just go for a drive to the many small towns around Aix to see lots of lavender fields, vineyards, etc. It gives you a chance to go off the beaten track and just experience France.
