I don't quite understand when to use what term, would a trans-man be MtF or FtM?
Does a trans-woman identify as a woman? Or were the assigned female at birth and identify as a man?
Or is it their current sex (like based on genitalia)?
Update:I was asking so I could understand when people said it. Obviously if you identify as a female I'll refer to you as a female and vise versa.

Gender identity and physical sex are two different things.
Gender identity is how a person feels inside and is more important.
A transwomen has a female gender identity and identifies as a women regardless of surgical status / genitalia and should be treated as a women.
A transman has a male gender identity and identifies as a man.

The term trans is not use in everyday life, it is female or male pronouns depending on presentation.
MtF or FtM or trans is only used when there is some "need" to call out that status.
Man to Femlae is a MTF.
Female to Male is a FTM.
Trans gender people think of themselves as the opposite sex.
A Transgender man thinks hes a woman
A Transgender woman thinks shes a man.
Transgender people like to b classified as the sex they changed to, while others don't really care.
