I grew my own garlic. the heads are small and they are so spicy and strong. What did i do wrong. I have never had garlic taste so strong. I thought homegrown was supposed to be milder.
It is possible you picked them too early and if they have been planted from seed they could be a different variety to what you would normally buy when you buy a bulb
There are different kinds of garlic, some very strong and some much milder. I'm sure you didn't do anything wrong, it's just the way that garlic is. If it's strong, use less or cook it longer.
Peel them and cook them in salted water even with sugar if you like the taste. Boil for 10 minutes, shut the fire and let cool. Drain and rinse. Now you have a very mild garlic. You can also preserve them in a jar by pouring oil over them.
Maybe you pulled the garlic too soon. Try leaving them in the soil for more time and then see which is better.
You've done nothing wrong, garlic is just really strong and if they're really small than maybe you haven't let them grow long enough.. we have a little vegetable garden as well and our experience is that most vegetables are stronger in flavour than they are in the supermarket.
Growing longer will make it less strong. Picking when they are small it will pack on the flavor in little space letting it grow longer the flavor spreads out more evenly. When leaves begin to turn yellow and begin dying it’s almost time to harvest them give them a few more day after that it should be perfect. Hope that helps.
The finer you chop it , the stronger it will be for use.. IF you cook with it WHOLE,, it will be very mild like an onion and very tasty.... also let it grow longer,
