the best way to deal with eBay is to enter the max you would be willing to pay it will bid for you up to that amount but not more that way you will have a good chance to win the auction. some times if you are bidding yourself at the end it is easy to get carried away and you may wind up paying more than you really wanted to or even more than it is worth
From my experience the best thing to do is to sit there until the last few minutes of the auction and refresh your screen so if there is a higher bid you can put the next highest bid -- and then add a penny. The penny can throw them off. ;-)
